Winter has hit Minnesota. Not has bad as it’s hit other parts of the U.S. (Really Old Man Winter? It wasn’t enough that you hit the Midwest like a sledgehammer every year, you have to go and show you can be meaner to the other state areas as well?), but come it has. Which means that warm, hearty comfort food is now in style again.
Last week I found myself in the situation that a lot of people find themselves in. At a loss for something to cook, and a fridge and freezer with things to mix and match. I was standing there staring and flipping through my rolodex of imagination when I caught sight of the frozen peas and was hit by a memory. My mother in the kitchen and a big plate of a meat and peas type dish in the center of the kitchen table. There was always something slightly different about it each time (sometimes there was onions, sometimes there was garlic, once it was spinach and not peas), but it was still the same basic dish. I decided to recreate it as best as I could figure it out. This is the result.
Ground Beef and Peas
- 1lb ground beef
- 1 Package (10 oz) frozen peas, unthawed
- 1 Tbsp Lawry's Seasoning Salt (or seasoning of your choice)
- 1 Tbsp ghee
Melt the ghee in a large pan and brown the meat. After the meat is browned, remove the meat and set it off to the side.
Pour still frozen peas into the still hot pan and allow the heat to defrost them. Cook the peas until they're bright green and tender.
Add the meat and seasoning, and heat up the mixture.
Remove from heat and serve.
